A ripening room built to cold storage logic will hold its setpoint beautifully and still deliver shrivelled fruit. The reason is that the coil doing the temperature work is also quietly doing dehumidification work, and nobody specified how much of that was acceptable.

Weight loss shows up as a yield problem rather than a refrigeration problem, which is why it often reaches us late — usually through the commercial team rather than the engineering one.

Design points that matter

  • Coil surface area and the resulting temperature difference — a bigger, warmer coil dries the air less
  • Air distribution that reaches the whole stack, since dead zones ripen at their own pace
  • Humidification capacity sized for the load, not added afterwards as a remedy
  • Ethylene dosing and ventilation control treated as part of the same system, not a separate kit
Hold the temperature and lose the humidity, and you have built an expensive dehydrator.
